Ingredients
  

  • 1 cup almonds roughly chopped
  • 1 cup pecans roughly chopped
  • 1/2 cup walnuts roughly chopped
  • 1/2 cup pumpkin seeds
  • 1/2 cup sunflower seeds
  • 1/2 cup shredded coconut unsweetened
  • 1/2 cup erythritol granular
  • 1 large egg white
  • 3 tbsp coconut oil melted
  • 1 tsp vanilla extract
  • 1 tsp cinnamon
  • 1/4 tsp sea salt

Instructions
 

  • Preheat oven to 300°F (150°C) and line a baking sheet with parchment paper.
  • Whisk the egg white in a large bowl until frothy.
  • Add coconut oil, vanilla, cinnamon, salt, and sweetener; mix well.
  • Fold in all chopped nuts, seeds, and coconut until coated.
  • Spread onto the baking sheet and press down firmly into an even layer.
  • Bake for 20-25 minutes. Let cool completely before breaking into clusters.

Notes

clusters only form if you press the mixture down before baking and leave it alone while cooling.
Store in a glass jar for maximum crunch.
Serve with unsweetened almond milk or Greek yogurt.
