Ingredients
  

  • 2 cups almond flour
  • 1/2 cup butter melted
  • 16 oz cream cheese softened
  • 3/4 cup monk fruit sweetener powdered
  • 2 large eggs
  • 2 medium chayote squash peeled and diced
  • 1 tsp apple extract
  • 2 tsp cinnamon
  • 1/2 cup Allulose for caramel
  • 1/4 cup heavy cream
  • 1 tsp vanilla extract
  • 1/4 tsp xanthan gum

Instructions
 

  • Preheat oven to 350°F (175°C). Mix almond flour and melted butter, press into an 8x8 pan, and bake for 10 mins.
  • Beat cream cheese, 1/2 cup sweetener, eggs, and vanilla until smooth. Pour over the crust.
  • Simmer chayote, some sweetener, cinnamon, and apple extract for 15 mins. Stir in xanthan gum.
  • Spoon apple mixture over cheesecake and bake for 35 mins.
  • Melt Allulose until amber, then whisk in butter and cream for caramel. Drizzle over bars.
  • Chill in the fridge for 4 hours before slicing.

Notes

The overnight chill is the most important step for the perfect texture. Use a sharp, warm knife for clean slices.
