Ingredients
  

  • 3 lbs beef chuck roast cut into chunks
  • 1 cup beef broth low sodium
  • 3 chipotle peppers in adobo
  • 1 tbsp adobo sauce
  • 5 cloves garlic minced
  • 1/4 cup lime juice
  • 1/4 cup apple cider vinegar
  • 1 tbsp ground cumin
  • 1 tbsp dried oregano
  • 1/4 tsp ground cloves
  • 2 tsp sea salt
  • 1 tsp black pepper

Instructions
 

  • Sear the beef chunks in the Instant Pot on Sauté mode until browned. Remove and set aside.
  • Whisk together beef broth, chipotle peppers, adobo sauce, garlic, lime juice, vinegar, and spices.
  • Return beef to the Instant Pot and pour the sauce mixture over it.
  • Pressure cook on High for 60 minutes. Let the pressure release naturally for 15 minutes.
  • Transfer beef to a bowl and shred using two forks.
  • Toss with cooking juices and serve in bowls with avocado and cilantro.

Notes

Adjust the heat by adding or removing chipotle peppers. For best results, serve with fresh cilantro and pickled red onions.
