Ingredients
  

  • 3 medium chayote squash peeled, cored, and sliced
  • 1/2 cup monk fruit sweetener brown blend
  • 2 tbsp lemon juice
  • 1 tbsp ground cinnamon
  • 1 tsp apple extract optional
  • 1 1/2 cups almond flour
  • 1/2 cup pecans chopped
  • 4 tbsp butter cold and cubed
  • 1/4 tsp ground nutmeg
  • 1/4 tsp sea salt
  • 1 tsp xanthan gum
  • 1/2 cup water

Instructions
 

  • Preheat oven to 375°F (190°C). Simmer chayote, water, lemon, half the sweetener, and cinnamon in a saucepan for 20 mins.
  • Stir in xanthan gum to thicken, then transfer the filling to a baking dish.
  • Mix almond flour, pecans, remaining sweetener, and spices in a bowl.
  • Cut cold butter into the dry mix until crumbly.
  • Spread topping over the filling.
  • Bake for 30-35 minutes until golden. Cool slightly before serving.

Notes

Chayote has a neutral taste; don't be shy with the cinnamon! It mimics apple texture perfectly.
