Ingredients
  

  • 1.5 lbs chicken breast sliced into thin strips
  • 3 cups cauliflower rice fresh or frozen
  • 2 medium bell peppers sliced into strips
  • 1/2 medium red onion sliced
  • 2 tbsp olive oil
  • 1 tbsp chili powder
  • 1 tsp cumin
  • 1 tsp garlic powder
  • 1/2 tsp smoked paprika
  • 1 large avocado sliced for topping
  • 1/4 cup sour cream
  • 1/4 cup fresh cilantro chopped

Instructions
 

  • Mix spices in a bowl and toss chicken with half the mixture.
  • Heat oil in a skillet and sear chicken for 5-6 minutes. Remove and set aside.
  • Sauté peppers and onions with remaining oil and spices for 4-5 minutes.
  • Cook cauliflower rice in a pan or microwave until tender.
  • Layer cauliflower rice in bowls and top with chicken and vegetables.
  • Finish with avocado, sour cream, cilantro, and fresh lime.

Notes

For extra heat, add sliced jalapeños. If you don't have cauliflower rice, serving this over a bed of shredded romaine lettuce also works perfectly.
