Ingredients
  

  • 2 1/2 cups almond flour blanched
  • 1/2 cup erythritol granular
  • 1/2 cup butter softened grass-fed
  • 1/4 cup sour cream full fat
  • 3 large eggs
  • 2 tsp baking powder
  • 1 tbsp cinnamon ground
  • 1 tsp vanilla extract
  • 1/4 tsp sea salt
  • 2 tbsp erythritol for swirl
  • 1 tsp cinnamon for swirl
  • 1/4 cup almond milk unsweetened

Instructions
 

  • Preheat oven to 350°F (175°C) and line a loaf pan with parchment paper.
  • Cream butter and erythritol. Beat in eggs, sour cream, vanilla, and almond milk.
  • Whisk almond flour, baking powder, cinnamon, and salt in a separate bowl.
  • Fold dry ingredients into wet. Mix extra cinnamon and erythritol for the swirl.
  • Layer half the batter, add the swirl mix, then top with remaining batter and swirl with a knife.
  • Bake for 40-45 minutes. Cool completely on a wire rack before slicing.

Notes

Cooling is crucial for the structure of almond flour cakes. Best served slightly warm with a dab of butter.
