Ingredients
  

  • 2 lbs beef chuck roast cubed
  • 4 slices bacon chopped
  • 2 cups radishes halved
  • 1/2 can Guinness Draught 200ml
  • 2 cups beef broth
  • 2 tbsp tomato paste
  • 2 cloves garlic minced
  • 1 small onion chopped
  • 2 stalks celery sliced
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • 1/4 tsp xanthan gum

Instructions
 

  • Cook bacon in a Dutch oven until crispy. Remove bacon and keep the fat.
  • Sear beef cubes in the bacon fat until browned on all sides. Set aside.
  • Sauté onion and celery for 5 minutes. Stir in garlic and tomato paste.
  • Deglaze the pan with Guinness. Add broth, herbs, beef, bacon, and radishes.
  • Simmer on low, covered, for 60 minutes until the beef is tender.
  • Whisk in xanthan gum to thicken. Season and serve warm.

Notes

For a completely gluten-free version, replace Guinness with beef broth and 1 tsp of instant coffee granules.
