large head cauliflower

cooked and crumbled

sour cream

cheddar cheese
shredded

green onions

Instructions
Preheat oven to 425°F (220°C). Roast cauliflower with oil and salt for 15-20 minutes.
Whisk cream cheese, sour cream, garlic powder, and 1 cup of cheddar in a bowl.
Fold in the roasted cauliflower, half the bacon, and half the green onions.
Transfer to a 9x13 baking dish. Top with remaining cheese and bacon.
Bake at 350°F (175°C) for 10-15 minutes until bubbly.
Garnish with the rest of the green onions and serve.
Notes
Roasting the cauliflower first ensures it doesn't get watery. For a kick, add sliced jalapeños.
