Ingredients
  

  • 1 large head cauliflower cut into florets
  • 2 tbsp olive oil
  • 6 slices bacon cooked and crumbled
  • 1/2 cup sour cream full-fat
  • 4 oz cream cheese softened
  • 1 1/2 cups cheddar cheese shredded
  • 1/4 cup green onions sliced
  • 1 tsp garlic powder
  • 1/2 tsp sea salt
  • 1/4 tsp black pepper

Instructions
 

  • Preheat oven to 425°F (220°C). Roast cauliflower with oil and salt for 15-20 minutes.
  • Whisk cream cheese, sour cream, garlic powder, and 1 cup of cheddar in a bowl.
  • Fold in the roasted cauliflower, half the bacon, and half the green onions.
  • Transfer to a 9x13 baking dish. Top with remaining cheese and bacon.
  • Bake at 350°F (175°C) for 10-15 minutes until bubbly.
  • Garnish with the rest of the green onions and serve.

Notes

Roasting the cauliflower first ensures it doesn't get watery. For a kick, add sliced jalapeños.
