Ingredients
  

  • 3 tbsp almond flour super-fine
  • 1 tbsp unsweetened cocoa powder
  • 1 tbsp erythritol or monk fruit
  • 1/2 tsp baking powder
  • 1 large egg
  • 1 tbsp heavy whipping cream
  • 1/2 tsp vanilla extract
  • 1 pinch sea salt
  • 1 tsp sugar-free chocolate chips optional

Instructions
 

  • In a 12oz mug, whisk dry ingredients (almond flour, cocoa, sweetener, baking powder, salt).
  • Add the egg, heavy cream, and vanilla. Whisk until smooth.
  • Stir in sugar-free chocolate chips if using.
  • Microwave on high for 60-90 seconds until the top is set.
  • Let the cake rest for 2 minutes before eating.
  • Serve with whipped cream or enjoy straight from the mug.

Notes

Resting for 2 minutes prevents a gummy texture. For a lava cake effect, microwave for only 60 seconds.
