Ingredients
  

  • 1/4 cup almond flour or 1.5 tbsp coconut flour
  • 1 tbsp unsweetened cocoa powder
  • 1 tbsp erythritol
  • 1/2 tsp baking powder
  • 1 large egg
  • 1 tbsp melted butter
  • 1/2 tsp vanilla extract
  • 1 pinch sea salt
  • 1 tbsp sugar-free chocolate chips
  • 1 tbsp heavy cream add 2 tbsp if using coconut flour
  • 1/4 tsp instant coffee optional
  • 1 tsp water

Instructions
 

  • Whisk dry ingredients (flour, cocoa, sweetener, baking powder, salt) in a microwave-safe mug.
  • Add the egg, butter, vanilla, and heavy cream. Whisk until smooth.
  • Fold in the sugar-free chocolate chips.
  • Microwave on high for 60-90 seconds until the top is set.
  • Let rest for 1 minute before eating.
  • Add toppings like whipped cream if desired.

Notes

Almond flour yields a moister cake. Coconut flour yields a denser, fudgier cake. Adjust cream as noted.
